Housed in a converted 1940s gas station, Rolling Bones has a unique atmosphere that merges Art Deco with retro-modern to create an immaculate space. Full windows, a viewable service line and the fresh white, blue and chrome interior bring everything into the open. The only secret here is the sauce. The Rolling Bones menu features unadulterated Texas Pit Barbecue that has been mastered by central Texas native Bill Collins in his Virgin Island locations for the past 20 years. Traditional meats are slow cooked over mesquite and accompanied by two distinctive sauces and time-honored sides.
