BARBECUE STYLE - style: (verb) At Rolling Bones we produce great food by utilizing proper cooking techniques, which include brining, marinating, curing, resting, and of course smoking. Naturally, we incorporate as many local products as truly possible. Our menu is designed to showcase the products we are using, highlight the cooking method and expand traditional expectations of barbecue. Our menu, like the building’s design, is a throwback to an era of simplified indulgence. To call the food something other than barbecue would be an attempt to be different for different’s sake. We hope that the food speaks for itself in showing that this barbecue is different, because it is done in an age-old tradition. We are producing this food with the utmost respect for the animal from which it came, the ground in which the food is grown and the way my father and his father did it. Barbecue, to us, is a social event. It is a family reunion, church social, picnic basket and celebratory business lunch. Barbecue is break-up food. Who can get mad at someone when they’re eating really good barbecue? Barbecue is simply a good time. The memories of good barbecue, or a good time, always start with the smoke. Just as in campfires, or modern fireplaces the sweet and sultry aroma of burning wood enlivens the senses. It’s the equivalent of smelling grandma’s biscuits or granddad’s bacon in the morning. You just know you’re supposed to be eating something. Barbecue just makes perfect sense for us to do. It is the simplest form of cooking and that is what we were looking forward to doing. Is it out of the realm of a chef to do barbecue? Is it out of the realm for Laurent Tourondel to do B.L.T. Burger or Tom Colicchio to do Craft Steak or even Richard Blais to do FLIP? It just goes to the basics, salt & pepper. Though we have a long history of successful, upscale, fine dining restaurants, this is the food that we love to eat the most. |
